Broccoli Casserole



Broccoli Casserole

This turned out great! I can't wait to make it again!

Ingredients

* 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
* 1 cup grated sharp cheddar
* 2 (10 3/4-ounce) cans condensed cream of mushroom soup
* 2 eggs, lightly beaten
* 2 cups crushed crackers
* 2 tablespoons butter, melted

Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl, combine broccoli, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

Three Meat Baked Beans






Three Meat Baked Beans

My mom has made this bean dish for years now and it is always a hit at family gatherings! Usually there are NO leftovers!

Ingredients

* 1/2 pound Polish sausage (or turkey smoked sausage), cut into 1/4-inch slices
* 1/2 pound ground beef (or ground turkey)
* 3 tablespoons chopped onion
* 5 slices bacon, cooked and crumbled
* 2 (16-ounce) cans pork and beans
* 1/3 cup ketchup
* 1/4 cup firmly packed brown sugar
* 2 tablespoons molasses
* 1 1/2 teaspoons Worcestershire sauce
* 1 1/2 teaspoons prepared mustard

Preparation

Brown Polish sausage in a skillet; remove from skillet, and discard drippings. Set sausage aside.

Combine ground beef and onion in skillet; cook, stirring until meat crumbles and is no longer pink. Drain.

Stir together ground beef mixture, sausage, bacon, and remaining ingredients in a lightly greased 11- x 7-inch baking dish.

Bake, uncovered, at 350° for 30 minutes.

Zucchini and Tomato Casserole






Zucchini and Tomato Casserole

3 large or 4 medium zucchini, washed & sliced crosswise
3 large tomatoes, peeled & sliced
1 large sweet onion, sliced
1 1/2 c. cracker crumbs
1 c. grated sharp cheese
salt & pepper
1 can tomato paste, diluted
1 stick butter
1 tbsp. brown sugar

Sprinkle brown sugar over tomatoes. Alternate zucchini, tomatoes, and onions in a buttered casserole, sprinkle each layer with crumbs, cheese, salt, and pepper and dotting with bits of butter. Put a layer of tomato paste over it all. Lastly, put a top layer of cheese. Bake at 350 degrees for 1 hour and 15 minutes.

French's Green Bean Casserole


French's Green Bean Casserole
This is a classic!! MaMa Arrington made this recipe.

Ingredients:

1 (10 3/4 oz.) can CAMPBELL'S® Cream of Mushroom Soup

3/4 cup milk

1/8 tsp. black pepper

2 (9 oz. each) pkgs. frozen cut green beans, thawed*

1 1/3 cups FRENCH'S® Original or Cheddar French Fried Onions
Directions:

MIX soup, milk and pepper in a 1 1/2 -qt. baking dish. Stir in beans and 2/3 cup French Fried Onions.

BAKE at 350°F for 30 min. or until hot.

STIR. Top with remaining 2/3 cup onions. Bake 5 min. until onions are golden.
Tips from French's

Tips: You may substitute 2 cans (14 1/2 oz. each) cut green beans, drained or 4 cups fresh, cooked cut green beans. Also some people add cheese, soy sauce or Worcestershire sauce.

Baked Corn Casserole





Always delicious -- and super easy!! I sometimes make the casserole and sometimes muffins. Either way is great and make a fantastic side item to almost any meal!

Baked Corn Casserole

Ingredients:
1 can creamed corn
1 can corn (undrained)
1 (8oz.) sour cream
1 Jiffy cornbread mix
2 eggs
1 stick melted butter

Blend all together and bake at 350.
For a 2 quart casserole dish, bake for 1 ½ hours.

Brown Rice Casserole



One of the first family recipes that Eric asked me to learn was his MaMa's brown rice. After making it, I could see why he likes it so much!

Brown Rice Casserole

1 C. long-grain rice
1 can beef broth
1 can french onion soup
2 T. butter or margarine

Combine all the ingredients in a casserole dish. Cover and cook for 1 hour at 350.
