Peach-Thyme Muffins



Peach-Thyme Muffins

Anyone else lovin' these summer peaches??!! I'm blessed to live in Georgia where the peaches are extra sweet and this peach-thyme combo is awesome! I found this recipe in a cookbook: The Part-Time Vegan - 201 Yummy Recipes That Put the Fun in Flexitarian by: Cherise Grifoni. I'm trying out several recipes from this cookbook in order to review it for BookSneeze. This recipe is a for-sure keeper!

Ingredients:
2 c. whole wheat flour
1 c. white whole wheat flour
3/4 to 1 c. sugar
1/2 tsp. salt
1 tbsp. baking soda
1/2 c. peach jam
1 1/2 c. almond milk
1 tsp. lemon extract
1/4 c. fresh thyme
1 c. peaches, diced
honey for drizzling

Directions:
1. Preheat oven to 400F.
2. Combine both flours, sugar, salt, and baking soda in a large bowl. Set aside.
3. In a different bowl, whisk together the jam, almond milk, and lemon extract. Make sure to mix well!
4. Slowly add the wet mix to the dry mix. Stir as you go.
5. Fold thyme into mixture.
6. Fold peaches in gently.
7. Grease muffin tins with vegan margarine and add batter so each cup is about two-thirds full.
8. Bake for 25 minutes and then cool. Very gently remove from tin and drizzle with honey. Enjoy!!

Garlic Knots



Garlic Knots

Here's a great recipe to go along with any type of Italian meal!
First make your dough. This is the same dough recipe I use for my pizzas.

Ingredients for dough

* 1 cup warm water
* 1 tsp. sugar
* 1 1/4-oz. packet active dry yeast
* 3 tbsp. olive oil, plus extra for coating
* 2 1/2 cups all-purpose flour, plus extra for dusting
* 1 tsp. salt

Ingredients for butter mixture topping
The proportions I enjoy are 1 tbsp. minced garlic mixed with 1/2 stick of butter. Then add salt as needed.
* garlic (fresh or minced)
* 1 or 2 sticks of butter (depending on how many garlic knots you want to make)
* salt

Instructions

1. Place 1/4 cup warm water in a small bowl. Stir in the sugar until dissolved, then sprinkle the yeast onto the surface of the water. Let the yeast float there for 1 minute, then stir it into the water. Let the yeast "proof" for 10 minutes. It should bubble a bit; if it doesn't, the yeast is outdated and inactive.
2. Pour the yeast mixture into a large bowl, then stir in the remaining water, and add the olive oil, flour and salt. With a wooden spoon, mix the dough until it forms a ball. On a lightly floured surface, knead the dough for 10 minutes, or until it is smooth and elastic.

Coat the inside of a large glass or ceramic bowl with olive oil. Press the ball of dough into the bottom of the bowl, then flip the dough over so the oiled side is on top. Cover the bowl with plastic wrap, then let the dough rise in a warm place until it has doubled in bulk, about 1 1/2 hours. Makes 1 1/2 pounds of dough.

After the dough has risen, knead the dough again. Then break off small pieces and roll into a snake. Tie those pieces into knots. Bake at 450 degrees until slightly brown on top. Take it out of the oven and then pour butter mixture on top. Enjoy!!!

A fun food idea from FamilyFun magazine! My Valentines sure did enjoy it!

Perfect Pizza Dough


Kids can push, pull and twist this basic pizza dough all they want--the more you handle it, the better. Use it for pizza, breadsticks, calzones and even focaccia.

Ingredients

* 1 cup warm water

Now to construct the pizza.

Ingredients

Perfect Pizza Dough (the recipe above)
olive oil for coating or cornmeal for dusting
1 c. homemade or store-bought tomato pizza sauce
3 c. cheese (of your choice)

Directions

Heat the oven to 450 degrees. Punch down the risen dough, knead it a few times to remove all the air, and divide it in two. On a lightly floured work surface, use a rolling pin to roll one portion into a 12-inch round. Place on a lightly oiled baking sheet and shape into a heart. Take some more dough in your hands and roll the dough in a snake shape to make the crust around the edges.

Spread a thin layer of sauce on the crust--not too much, or else your pizza will become soggy. (A word on sauce: if you don't have time for homemade, spruce up a 14-ounce jar of store-bought by adding garlic and dried oregano.)

Top your pizza with cheese and your choice of any additional toppings. Bake 12 to 15 minutes; subtract a few minutes if you're using a pizza stone. When done, the crust will be golden underneath. Makes two 12-inch pizzas.

Bran Muffins

These turned out great! I love the texture! Don't leave out the pecans because I feel that is the key ingredient--oh SO GOOD! Thank you, Jamie and Barbara for sharing this delicious recipe!

Ingredients:
* half of a 20 oz. box Raisin Bran cereal
* 2 c. buttermilk
* 1 1/4 c. brown sugar
* 2 1/2 c. plain whole wheat flour
* 2 1/2 tsp. soda
* 1 tsp. salt
* 1/2 c. cooking oil
* 2 large eggs
* 1 tsp. cinnamon
* 1/2 tsp. cloves
* 3/4 c. pecans
* 1 c. raisins

Directions:
* Combine the following: Sugar, oil, eggs – then the buttermilk. Next mix this mixture with all dry ingredients. Beat well with mixer. Add nuts and raisins. Spray muffin tin.
* Bake at 350 degrees for 15-20 minutes depending on size of muffins.

*freeze well

Pumpkin Pancakes

Here's a Thanksgiving breakfast that the whole family will enjoy!




Pumpkin Pancakes

Ingredients:

2 c. all purpose flour
2 tbsp. sugar
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 ½ c. milk
1 c. pumpkin
4 eggs, separated
¼ c. butter, melted

Directions:

*In a large bowl, sift together flour, sugar, baking powder, salt, and cinnamon.
*Combine milk, pumpkin, egg yolks, and butter in another bowl. Pour into dry ingredients. Stir just until blended.
*Beat egg whites until stiff. Fold into batter.
*Preheat griddle, grease lightly. Pour on batter, about ¼ cup for each pancake. Cook until tops bubble and is dry and bottom browned. Turn and cook other side until browned. Makes about 2 dozen 3-4 inch pancakes.

If you like "Pig in the blankets", you'll love these crescent butterflies!

Olivia had a butterfly themed birthday party and this was one of the finger foods I prepared. The recipe is from Taste of Home and I simplified it a little. The URL for the original recipe is http://www.tasteofhome.com/recipes/Crescent-Butterflies.

Ingredients

* 2 tubes of refrigerated crescent rolls
* 1 small pkg. of Little Smokies sausages
* 2 tablespoons butter, melted
* 1 tablespoon grated Parmesan cheese

Directions

* Unroll crescent dough on a lightly floured surface; roll into a 12-in. x 9-in. rectangle. Seal seams. Cut with a butterfly cookie cutter dipped in flour. Place 1 in. apart on an ungreased baking sheet. Press a Little Smokies sausage in the middle of each butterfly.
* Brush wings with butter. Sprinkle with Parmesan cheese. Bake at 375° for 10-12 minutes or until golden brown. Cool for 10 minutes before removing to a wire rack.

Best Mexican Cornbread

Ingredients:

1 c. self-rising corn meal
3/4 c. milk
1/3 c. vegetable oil
2 eggs
1 14oz. can cream-style corn
1 1/2 c. grated Monterey Jack cheese
1 chopped fresh jalapeno pepper
1 4 oz. can chopped mild green chilies (optional)

Directions:

1. Preheat oven to 350 F
2. Mix all the ingredients in a bowl.
3. Bake until slightly brown.

Zucchini Bread




Zucchini Bread

Ingredients

* 3 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 3 teaspoons ground cinnamon
* 3 eggs
* 1 cup vegetable oil
* 2 1/4 cups white sugar
* 3 teaspoons vanilla extract
* 2 cups grated zucchini
* 1 cup chopped walnuts

Directions

1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
