A Queen's Quesadilla - Letter "Q"

Here is the Queen holding her Quesadilla! 
This was fun and easy to make!!
 Ingredients:
jelly beans
shredded cheddar cheese
butter
tortilla
 Directions:
1. In a warm skillet we melted the butter, added the tortilla, and then put shredded cheese on it. We folded the tortilla over and flipped it a few times while it was cooking and the cheese was melting.
2. Then we took a butter knife and cut out a crown pattern.
3. Lastly we added the jelly beans as jewels to the crown.

Broccoli Casserole



Broccoli Casserole

This turned out great! I can't wait to make it again!

Ingredients

* 2 (10-ounce) packages frozen chopped broccoli, cooked and drained
* 1 cup grated sharp cheddar
* 2 (10 3/4-ounce) cans condensed cream of mushroom soup
* 2 eggs, lightly beaten
* 2 cups crushed crackers
* 2 tablespoons butter, melted

Directions

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil cooking spray.

In a large mixing bowl, combine broccoli, cheese, soup and eggs. Mix well with a metal spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over the crackers. Bake for 35 minutes or until set and browned.

Pineapple Casserole

can be served as a dessert with ice cream on top!

Pineapple Casserole
My MaMa Thomason use to make this.

This is one of my favorites! The pineapple and cheese combination tastes terrific!
Ingredients

* 1 cup sugar
* 6 tablespoons all-purpose flour
* 2 cups grated sharp cheddar
* 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
* 1 cup cracker crumbs (recommended: Ritz)
* 8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Directions

Preheat the oven to 350 degrees F.

Grease a medium-size casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

Cheeseburger Crescent Bake

I first tasted this at my sister-in-law's home. Thanks Lori for the great recipe! My son and daughter both like this meal, which is very unusual, so I know I will keep making this!

INGREDIENTS
1 lb. ground beef, cooked, drained
1/2 c. ketchup
1/4 c. dill pickle relish
1 1/2 c. shredded American cheese (6 oz)
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls

DIRECTIONS

1. In 10-inch skillet, mix beef and ketchup. Heat to boiling over medium-high heat, stirring occasionally; stir in relish and 1 cup of the cheese. Spoon into ungreased 9- or 10-inch glass pie plate.
2. Separate dough into 8 triangles; roll up 1 inch on shortest side of dough. Place dough on top of meat mixture in spoke pattern with points towards center. Sprinkle with remaining 1/2 cup cheese.
3. Bake at 375°F 15 to 20 minutes.

Lasagna


Lasagna

This delicious recipe is from our pastor's wife, Katie. She watched her mom make it this way growing up. Katie said, "You can choose to leave out the olives. Sometimes I use Ricotta instead of Cottage Cheese and you can use any combination of ground beef and/or Italian sausage. I also add more or less tomato sauce if it seems dry. Enjoy!"

I personally love this recipe! We had the whole Boyd Family over and there wasn't a bite left! I can't wait to make it again!

Ingredients:

1 lb. ground beef
1/2 of a medium sized onion
1 box lasagna noodles
1 jar or can of pre-made spaghetti sauce
1 small can of sliced olives
garlic to taste (powder, minced, or fresh)
2 c. of cottage cheese
2 c. shredded cheddar cheese

Directions:

1. Chop the onion and cook it while browning the ground beef.
2. Boil the noodles if you have the regular kind. I use the "oven ready" noodles that you don't have to boil.
3. Once the meat is cooked, drain off the fat and return it to the stove on low heat.
4. Add the spaghetti sauce, olives, garlic, and cottage cheese. Mix all of this together while cooking on low heat.
5. Layer the bottom of a 9x13 pan with 3 noodles. Top it with meat/sauce mixture and then sprinkle shredded cheddar cheese on top. Repeat these layers: noodles, meat/sauce mixture, cheese, until you've used up your ingredients.
6. Bake at 350 for 45 minutes or until bubbly. Allow to cool for 5 minutes before cutting and serving. Enjoy!

Momosita's Amazing Ground Turkey Meatloaf

I found this recipe on www.food.com. I tweaked the recipe just a little bit to make the ingredients easier to find. It's very delicious!!

Ingredients:

1 c. milk
1 c. breadcrumbs
1 lb. ground turkey
1 carrot, grated (approx 1/4 c.)
1/2 zucchini, grated (approx. 1/4 c.)
1/2 medium onion, diced (optional)
1 egg
1 cup mozzarella cheese
1/2 cup sharp cheddar cheese
2 tbs. Italian seasoning
1 tsp. seasoning salt
1/4 tsp. pepper
2 tsp. Worcestershire sauce (optional)
ketchup, to drizzle on top


Directions:

Preheat oven to 400 degrees.

Place milk and breadcrumbs in a bowl and let soak while mixing the rest of the ingredients.

Pat and squeeze the shredded zucchini and carrots between paper towels to soak up extra moisture.

Place ground turkey, carrot, zucchini, onion (optional), egg and cheese in a large bowl and mix.

Once the breadcrumbs have soaked up all of the milk, mix in the 2 Tbs of Italian seasoning and add to the turkey mixture.

Stir in the seasoned salt, pepper, and worcestershire (optional).

Place mix in a greased loaf baking pan and drizzle the ketchup on top.

Bake at 400 degrees for 55 minutes or until the internal temperature reaches 180 degrees. Remove from the oven, cover tightly with tin foil and let sit for 10 minutes.

Taco-Stuffed Pasta Shells






Taco-Stuffed Pasta Shells

Can't decide if you want to cook Mexican or Italian food tonight?? Try this delicious blend of both!!

Ingredients

* 16 jumbo pasta shells
* 1 pound ground beef
* 1 (1.25 ounce) package taco seasoning mix
* 1 cup water
* 1 (16 ounce) can refried beans
* 3/4 cup shredded Cheddar cheese
* 1 (16 ounce) jar salsa, divided
* 1/4 cup sliced green onion (optional)
* 1/4 cup shredded Cheddar cheese
* 1/2 cup sour cream (optional)

Directions

1. Bring a large pot of water to a boil over high heat. Stir in the shell pasta, and return to a boil. Cook the pasta uncovered, until just slightly firm to the bite, about 13 minutes. Drain well.
2. Brown the ground beef in a large skillet; drain fat. Stir in the taco seasoning and water; cook over low heat until thickened, about 5 minutes. Stir the refried beans and 3/4 cup Cheddar cheese into the taco meat. Spoon meat mixture into prepared pasta shells.
3. Spoon 1/4 cup salsa over the bottom of a 9x13 inch baking dish. Arrange filled shells over salsa. Spoon remaining salsa over shells.
4. Bake at 350 F for 40 minutes. Remove from oven. If desired, sprinkle with sliced green onion, additional shredded Cheddar cheese, and sour cream.

Chicken Thai Pizza




The top two pictures are the "from scratch" version and the bottom three pictures are the "easy-fast" version. Take your pick!








We were inspired by The California Pizza Kitchen. That is where we first ate chicken Thai pizza. And WOW E WOW!! Eric, my husband, came up with this easy recipe the other night. We like to have fun in the kitchen as you can tell:)

Chicken Thai Pizza

Ingredients:
1 Boboli pizza crust or make your crust from scratch (see below)
a handful of shredded carrots
4 chicken strips
banana peppers (optional)
1 (7 oz.) jar of peanut satay sauce *The brand we use is called A Taste of Thai.
mozzarella or cheddar cheese

1. First cook 4 chicken strips in the oven.
2. Shred a handful of carrots.
3. Spread peanut satay sauce on a pizza crust.
4. Add carrots.
5. Add chicken and banana peppers (optional).
6. Lastly add your cheese of choice and bake at 350 until cheese is melted. Enjoy!:)

To make the pizza dough from scratch,
Perfect Pizza Dough:

Ingredients

* 1 cup warm water
* 1 tsp. sugar
* 1 1/4-oz. packet active dry yeast
* 3 tbsp. olive oil, plus extra for coating
* 2 1/2 cups all-purpose flour, plus extra for dusting
* 1 tsp. salt

Instructions

1. Place 1/4 cup warm water in a small bowl. Stir in the sugar until dissolved, then sprinkle the yeast onto the surface of the water. Let the yeast float there for 1 minute, then stir it into the water. Let the yeast "proof" for 10 minutes. It should bubble a bit; if it doesn't, the yeast is outdated and inactive.
2. Pour the yeast mixture into a large bowl, then stir in the remaining water, and add the olive oil, flour and salt. With a wooden spoon, mix the dough until it forms a ball. On a lightly floured surface, knead the dough for 10 minutes, or until it is smooth and elastic.

Coat the inside of a large glass or ceramic bowl with olive oil. Press the ball of dough into the bottom of the bowl, then flip the dough over so the oiled side is on top. Cover the bowl with plastic wrap, then let the dough rise in a warm place until it has doubled in bulk, about 1 1/2 hours. Makes 1 1/2 pounds of dough.
