Banana Pudding - Letter "B"

Olivia is studying letter "B" and I couldn't think of a better letter "B" recipe than my Nana's Banana Pudding! Nana graciously gave Olivia and I a cooking lesson to learn how to make her pudding.

Ingredients:
5 bananas
3 eggs
2 c. milk
1 box of Vanilla Wafers
2 tbsp. all-purpose flour
1 c. sugar
 tsp. vanilla
dash of salt

Directions:
1. First, set your eggs out for one hour to come to room temperature.
2. After an hour has passed, put 2 cups of milk into a sauce pan on medium heat. Keep stirred with a whisk.
3. Put a layer of wafers on the bottom of a glass baking dish. Next cut up all of the bananas. Using about half of the banana pieces, line a row of bananas on top of the wafers.



4. Separate the eggs. With the egg yolk, add 3/4 cup of sugar, 2 heaping tablespoons of flour, and 1 teaspoon of vanilla. Gradually add about half of the milk to this mixture and stir. Then pour it all back into the boiler and stir. Pour half of this pudding mixture onto the wafers and bananas in the dish.
5. Next add another layer of wafers and bananas, followed by the remainder of the pudding.
6. Beat the egg whites with a hand mixer until they are stiff. Add a dash of salt. When the eggs get frothy add 1/4 cup of sugar and 1 teaspoon of vanilla. Spread this on top for the meringue.
7. Bake at 350 degrees until the meringue is slightly brown on top. Enjoy!

Watergate Salad




WATERGATE (PISTACHIO) SALAD

I grew up eating this at church and family pot-luck dinners. It's one of my favorites and it has a lot of sweet memories to go along with it!

1 sm. box instant pistachio pudding mix
1 (12 oz.) Cool Whip
1 sm. can crushed pineapple
1 heaping c. miniature marshmallows
3/4 c. chopped nuts (I prefer pecans)

Combine pudding mix and Cool Whip. Pour pineapple and pineapple juice over mixture. Combine. Add other ingredients and mix together. Cover. Refrigerate until serving.

Sweet Potato Crunch


My mother, Teresa, has made this recipe for years! It is my all-time favorite Thanksgiving dish! Even if you're not a big sweet potato fan, you are sure to like this dish with all the yummy butter, brown sugar, and pecans that are added. It's like getting to eat a dessert, but you can call it a "vegetable", ha, ha!:)

Sweet Potato Crunch

3 c. cooked, mashed sweet potatoes
1 c. sugar
1/4 tsp. salt
2 eggs, slightly beaten
1/3 stick butter, melted
1/2 c. milk
1 tsp. vanilla

Mix all ingredients together and pour into a greased baking dish. Cover with crunch topping.

CRUNCH TOPPING:

Melt 1/3 stick of butter. Add 1 cup brown sugar packed and 1/3 cup all- purpose flour. Blend well and add 1 cup chopped pecans. Sprinkle on top of potatoes.

Bake at 350 degrees for 35 minutes.

Easy Cobbler





Easy Cobbler

1 stick of butter
1 c. of flour
1 c. of sugar
1 c. of milk
2 c. of fruit of your choice (blueberry is my favorite!!)

Mix together melted butter, flour, sugar, and milk and pour in baking dish.
Spoon in fruit but do not stir.

Bake at 350 degrees for about an hour. Best if topped with vanilla ice cream! So yummy!

Corn Dip

Corn Dip

2 cans Mexicorn (drained)
1 c. sour cream
1 c. mayo
4-5 green onions
1-2 jalapenos
2 c. shredded cheese
1 small can chili peppers

Mix and bake at 350 F for 30-45 minutes.
Serve with tortilla chips

DELICIOUS!!! My mother recently got this recipe from a friend. She made this for the adults to snack on at Sawyer's birthday party and it was a hit! I think everyone liked it!

Mom's Chicken Pie



Mom's Chicken Pie

Ingredients:

3 or 4 boneless skinless chicken breasts
1 can cream of chicken soup
2 c. chicken broth
1 16 oz. can of Veg-All
1 stick of butter
1 c. self-rising flour
1 c. milk
salt & pepper

Directions:

Boil 3 or 4 boneless chicken breast, saving about two cups of the broth. Add salt and pepper while cooking. Chop chicken.

In a mixing boil, add the chopped chicken, one can of cream of chicken soup, two cups of chicken broth, and one 16 oz can of Veg-All. Mix all together and pour in baking dish.

In another mixing bowl, mix together 1 cup of flour, 1 cup of milk, and one stick of melted butter. Pour this mixture over the chicken mixture in the baking dish. Do not stir. Bake about one hour on 350 degrees.

Three Meat Baked Beans






Three Meat Baked Beans

My mom has made this bean dish for years now and it is always a hit at family gatherings! Usually there are NO leftovers!

Ingredients

* 1/2 pound Polish sausage (or turkey smoked sausage), cut into 1/4-inch slices
* 1/2 pound ground beef (or ground turkey)
* 3 tablespoons chopped onion
* 5 slices bacon, cooked and crumbled
* 2 (16-ounce) cans pork and beans
* 1/3 cup ketchup
* 1/4 cup firmly packed brown sugar
* 2 tablespoons molasses
* 1 1/2 teaspoons Worcestershire sauce
* 1 1/2 teaspoons prepared mustard

Preparation

Brown Polish sausage in a skillet; remove from skillet, and discard drippings. Set sausage aside.

Combine ground beef and onion in skillet; cook, stirring until meat crumbles and is no longer pink. Drain.

Stir together ground beef mixture, sausage, bacon, and remaining ingredients in a lightly greased 11- x 7-inch baking dish.

Bake, uncovered, at 350° for 30 minutes.

Mira’s Cheesecake



For many years now, my mother, Teresa has baked a delicious cheesecake. She is often asked to bake a cheesecake for family gatherings. Here's the recipe she uses. It's from a lady named Mira from Ila, Georgia (my hometown). I have used this recipe many times. I even used it while living overseas. I just had to make a few substitutions but it still turned out delicious. This is a must-try recipe!!!

Mira’s Cheesecake

Crust:

2 Cups Graham Cracker Crumbs
¼ cup Sugar
1/3 cup butter or oleo (melted)

Mix melted oleo with cracker crumbs and sugar. Press on bottom and sides of 10” spring form pan. Bake five minutes at 350 degrees.

Filling:
3 (8-ounce) packages cream cheese, at room temperature
¾ Cup sugar
2 Large Eggs, lightly beaten
1 teaspoon Vanilla
2 tablespoons Cornstarch
1 Cup Sour Cream

Beat together cheese and sugar until light and smooth. Beat in eggs, vanilla and cornstarch only until thoroughly mixed. Stir in sour cream until mixture is well blended. Pour into crust. Bake cheesecake for 45 minutes at 350 degrees. Remove from oven and place in refrigerator to cool immediately. This prevents cracks from forming in the cake.
