Easy Key Lime Pie




Easy Key Lime Pie

Ingredients:
1 Graham cracker pie crust
1/3 c. Nellie & Joe's lime juice
3 heaping spoonfuls of Cool Whip
1(14 oz.) can condensed milk
a few drops of green food coloring

Diretions:
Mix the lime juice, cool whip, and condensed milk together. Add a few drops of green food coloring and stir well. Pour it into the pie crust. Chill until firm.
Optional: may add additional Cool Whip as topping

Cheeseburger Crescent Bake



Cheeseburger Crescent Bake

I first tasted this at my sister-in-law's home. Thanks Lori for the great recipe! My son and daughter both like this meal, which is very unusual, so I know I will keep making this!

INGREDIENTS
1 lb. ground beef, cooked, drained
1/2 c. ketchup
1/4 c. dill pickle relish
1 1/2 c. shredded American cheese (6 oz)
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls

DIRECTIONS

1. In 10-inch skillet, mix beef and ketchup. Heat to boiling over medium-high heat, stirring occasionally; stir in relish and 1 cup of the cheese. Spoon into ungreased 9- or 10-inch glass pie plate.
2. Separate dough into 8 triangles; roll up 1 inch on shortest side of dough. Place dough on top of meat mixture in spoke pattern with points towards center. Sprinkle with remaining 1/2 cup cheese.
3. Bake at 375°F 15 to 20 minutes.

Watergate Salad




WATERGATE (PISTACHIO) SALAD

I grew up eating this at church and family pot-luck dinners. It's one of my favorites and it has a lot of sweet memories to go along with it!

1 sm. box instant pistachio pudding mix
1 (12 oz.) Cool Whip
1 sm. can crushed pineapple
1 heaping c. miniature marshmallows
3/4 c. chopped nuts (I prefer pecans)

Combine pudding mix and Cool Whip. Pour pineapple and pineapple juice over mixture. Combine. Add other ingredients and mix together. Cover. Refrigerate until serving.

Buckeyes

"The term Buckeye Balls is code for delicious chocolate, peanut butter candy goodies." ~ Southern Living magazine

Beware-- slightly addicting:) :)

Ingredients
• 1 (16-ounce) jar creamy peanut butter
• 1 cup butter or margarine, softened
• 1 1/2 (16-ounce) packages powdered sugar
• 2 cups (12 ounces) semisweet chocolate morsels
• 2 tablespoons shortening

Preparation
Beat peanut butter and butter at medium speed with an electric mixer until blended. Gradually add powdered sugar, beating until blended.
Shape into 1-inch balls; chill 10 minutes or until firm.
Microwave chocolate and shortening in a 2-quart glass bowl at HIGH 1 1/2 minutes or until melted, stirring twice.
Dip each ball in chocolate mixture until partially coated; place on wax paper to harden. Store in an airtight container.

Candy Cane Cookies






Candy Cane Cookies

Eric has fond childhood memories of his mom making these. And my dear friend, Cheryl, recommended these to me because she has been making them for 20 years now and they are one of her favorites! I made these tonight and they are indeed delicious! The almond extract is the key ingredient that make them so yummy!:)

1/2 c. butter softened
1/2 c. shortening
1 c. confectioners sugar
1 egg
1 1/2 tsp. almond extract
1 tsp. vanilla
2 1/2 c. all purpose flour
1 tsp. salt
1/2 tsp. red food color

Heat oven to 375. Cream the butter, shortening and confectioners sugar. Add egg and flavorings. Blend in the flour and salt. Divide the dough in half and blend food color into one half. Take a little bit of dough from 2 colors and roll each ball out into a nice long snake, then do the same with the other ball, then place them side by side and roll them/twisting them together, pressing lightly; then curve them at the top for the candy cane shape and put on the cookie sheet.
Bake about 9 minutes, until set. They harden more as they cool on the cookie sheet.

Cheryl says, "I actually also make these around Halloween and make orange dough and I do the same thing with the dough, twist 2 snakes together, but I put them in the circle shape and then some green dough at the top for the stem. I try to think of every way I can make these cookies!"

Guacamole



Guacamole

Hint: Buy your avocados when they are black and slightly soft.
INGREDIENTS
• 5 big avocados, cut in half and scoop out the insides (save one seed)
• Cilantro leaves finely chopped
• 2-3 small tomatoes finely diced
• Garlic salt to taste
• Dash of lemon or lime juice
DIRECTIONS
1. In a bowl, mush avocados until slightly chunky.
2. Add tomatoes, cilantro leaves, lemon/lime juice and garlic salt. Mix together.
*Tostitos Hint of Lime chips make this recipe even yummier!!:)

Buffalo Chicken Dip


Wing Dip

2 large (12.5 oz.) cans of fully cooked chicken, drained
2 blocks of 8 oz. cream cheese, softened
2 c. (8 oz.) Colby Jack cheese, shredded
1 c. Franks RedHot Buffalo Wing Sauce
1 c. Ranch dressing

Mix it all together in a 2 qt. (8 x 11) casserole dish and bake for 30 minutes at 350 F.

Use crackers, pretzels, or celery sticks for dipping. Enjoy!

Chocolate Oatmeal Candy



Chocolate Oatmeal Candy
A delicious and easy dessert, great for anytime!

1 stick of butter, melted
4 tbsp. cocoa
2 c. sugar
1/2 c. milk
3 c. oats (instant)
1/2 c. peanut butter

Combine sugar and cocoa; add milk and melted butter. Bring to a boil slowly. Add peanut butter and oats. Drop by teaspoons onto wax paper. Let cool.

*Makes 20 small candies or 15 large.

Ezekiel Muffins

Ezekiel Muffins


Here's a wonderful recipe from Bread Beckers. My mother-in-law, Sheila, taught me how to use her whisper mill and we made the muffins together. This recipe makes delicious muffins for breakfast or anytime! We added blueberries that I had picked.

*Recipe makes 12 large muffins.

Combine the following whole grains in the whisper mill to be ground:

* 2-1/2 cups hard red wheat
* 1-1/2 cups spelt or rye (Biblically spelt was used, Ezekiel 4:9)
* 1/2 cup barley (hulled barley)
* 1/4 cup millet
* 1/4 cup lentils (green preferred)
* 2 Tbs. great northern beans
* 2 Tbs. red kidney beans
* 2 Tbs. pinto beans

Mix all of those grains very well. Take 2 1/4 cups of this flour to make your muffins.

Preheat the oven to 400 for muffins.

Muffin ingredients:

2 & 1/4 cups of freshly milled flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 cup buttermilk
1 egg
1/2 cup oil ( I use olive oil, can use other)
1/2 cup honey (I measure oil first, then I measure honey in the same measuring cup. It makes the honey come out easier.)

Measure dry ingredients into mixing bowl. Add liquids and mix just until well blended. Drop by spoonfuls into greased muffin tins. Bake at 400 for 15 min.
To make them blueberry: Add 1 & 1/2 cups of berries and 1 tsp. cinnamon

Frito Salad



I watched Lori, my wonderful sister-in-law, make this for us last night!

Frito Salad

1/2 head Lettuce
1 tomato, chopped into pieces
1/2 bag of Fritos

Mix together just before serving. Pour Catalina dressing over salad and mix well.

(I read online that it is also good with ranch style beans and grated cheddar cheese.)

Peach Congealed Salad




Peach Congealed Salad

1 8 oz. can crushed pineapple
1 15 oz. can peaches with syrup
1 pkg. peach jello
8 oz. cottage cheese
1 12 oz. container Cool Whip

Combine the can of peaches (syrup included) with the can of crushed pineapple and bring it to a boil. Add peach jello and stir until dissolved. Remove from heat and 5 ice cubes; stir and cool. Add cottage cheese and Cool Whip. Beat well and congeal in refrigerator several hours until set.

Apple Crisp

I just tried this for dessert tonight and it was delicious!

Apple Crisp

1 C. self-rising flour
1/2 C. brown sugar
1 stick butter or margarine
2 C. applesauce or cooked apples

Melt butter and stir in flour and sugar. Put on top of apples in a baking dish. Bake at 425 until golden brown.
